Keep raw beetroot in a cool, dry place, away from direct sunlight for 3-4 days. Carefully twist off the roots, about 3cm from the end, do not cut them off or they will ‘bleed’ during cooking and lose their distinctive colour. Eating beetroot can be harmful to patients suffering from low blood pressure, consuming beetroot lowers the blood pressure even more.
